Makes 1 Serving
1 1/2-inch slice of fresh ginger
3 packets Monk Fruit In The Raw
1 tablespoon fresh lime juice
2 ounces pineapple juice
1 ounce light rum
1 ounce golden rum
1/2 ounce Malibu Caribbean Rum

Quarter the ginger and place it in a cocktail shaker. Add the Monk Fruit In The Raw and lime juice. Muddle the ginger with the Monk Fruit and juice for 30 seconds. Pour in the pineapple juice, light, golden, and coconut rum. Add enough ice to fill the cocktail glass. Cover and shake vigorously until the shaker is covered with frost.
Pour the cocktail into a hurricane-shaped or 12-ounce tall cocktail glass. Garnish with your favorite fruits or let your guests choose what they’d like. Serve immediately.
If you’d like to make this without the alcohol, increase the pineapple juice to 4 ounces and the lime juice to 2 tablespoons.
