Tuesday, October 20th

Sugar Reduction and Fiber Workshop
Led by Melanie Goulson of Merlin Development, this hands-on workshop moves from sweetener fundamentals to practical application. Participants will compare high-potency and bulk sweeteners—including erythritol, allulose, tagatose and maltitol—and taste how potency, sweetness dynamics and side-tastes differ. The workshop will also introduce practical bench techniques for measuring sweetness intensity and temporal attributes, then put those tools to work through guided formulation exercises. Attendees will explore sweetener and acidulant pairing in lemonade, sweetener blending in dairy applications, and reduced-sugar baking using rare sugars, polyols and fiber-based bulking agents in cookies and bars.

What does effective sugar reduction look like when performance is on the line? Sports nutrition professionals will connect CCC science to real-world fueling, recovery and athlete health, exploring the roles of carbohydrates, low- and no-calorie sweeteners and evidence-based product innovation across elite sports environments.

What Is Gold Star Science?
What makes scientific research rigorous, credible and worthy of trust? “Gold Star Science” is more than a positive result or publication in a peer-reviewed journal. It begins with an objectively framed research question and a study design capable of answering it—and continues through transparent funding disclosures, investigator independence, appropriate methods, reproducible results and publication regardless of outcome.
Scientific quality alone does not guarantee public trust. Drawing on IAFNS’s work to advance scientific integrity, this session will help attendees understand what distinguishes trustworthy research and how organizations can communicate evidence accurately—without overstating certainty or allowing the desired message to get ahead of the science.
