1 tablespoon extra-virgin olive oil
1 medium red bell pepper, in 1/4 strips
2 cloves garlic, minced
1 1/2 pounds fresh green beans, blanched
1/4 cup balsamic vinegar
Salt and freshly ground pepper to taste
1/4 cup freshly grated imported Parmesan cheese
Sauté bell pepper in oil until tender. Add garlic, green beans, vinegar, salt and pepper. Heat until beans are warmed. Serve hot, topped with freshly grated cheese.
