Easy Pumpkin Pie

Makes 8 Servings

Ingredients

3/4 cup SPLENDA® No Calorie Sweetener, Granulated
2 tablespoons light molasses
1/4 teaspoon salt
2 teaspoons ground cinnamon
4 egg whites
1 (15 ounce) can pumpkin puree
1 1/4 cups nonfat evaporated milk
1 (9 inch) unbaked pie crust
2 cups fat-free frozen whipped topping, thawed

Directions

Preheat oven to 350° F (175° C).

In a large mixing bowl, stir together SPLENDA® Granulated Sweetener, molasses, salt, and cinnamon. When these ingredients are well mixed, stir in the egg whites followed by the pumpkin and evaporated milk. Pour into the pie crust.

Bake for 1 1/4 to 1 1/2 hours in the preheated oven, or until a toothpick inserted into the pie comes out clean. Cool, then top with whipped topping before serving.

S’Mores

Makes 6 S’Mores

Ingredients

6 whole low-fat graham crackers, split in half to make 6 sandwiches
3-4 tbsp fat-free sweetened condensed milk
1/4 cup dark chocolate chips
1 tbsp unsweetened cocoa powder
A dash of your favorite low-cal sweetener to taste
6 large sugar-free marshmallows or a handful of smaller ones
1/2 tsp vanilla extract

Directions

Note: If you can’t find sugar free marshmallows in your grocery store, you can easily make them at home with this recipe from Food.com.

In a microwave proof dish, heat the sweetened condensed milk and chocolate chips on 50% heat in 15-second intervals until smooth. The slower the better. You don’t want to burn the chocolate.

Add the cocoa powder and stir until smooth again. Taste test and add a little bit of sweetener until you get it the way you want it. Stir in the vanilla extract.

Spread 1 tablespoon of chocolate on six of the graham crackers squares.

Warm your marshmallows over the fire or a grill. Put one on each chocolate covered graham cracker and sandwich with the remaining cracker.

If you’re stuck inside, you can assemble the sandwiches, wrap in foil and heat in 250-degree oven for about 10 minutes.

Want some alternatives to the traditional s’more? Try adding a little peanut butter, banana, apple or strawberry slices or try raspberry sauce if you’re not a chocolate lover.

Peach Jam

Ingredients

4 quarts water
1/2 cup lemon juice
3 pounds ripe peaches
3/4 cup water
1 (1.75 ounce) package SURE-JELL* For Lower Sugar Recipes Fruit Pectin
1/2 cup SPLENDA® No Calorie Sweetener, Granulated

Directions

Wash jars and lids in hot soapy water; rinse with warm water. Fill boiling-water canner half full with water; add jars and water to cover. Bring water to a boil, reduce heat and simmer. Place lids in water to cover in a small saucepan; bring water to a simmer. Simmer until ready to use. Remove and drain jars and lids, one at a time, as needed for filling.Combine 4 quarts of the water and lemon juice in a large bowl; set aside. Fill a Dutch oven 3/4 full with water; bring to a boil. Immerse peaches for 20 seconds or until skins easily peel away; remove with slotted spoon and plunge into ice water. Slip skin off peaches using a paring knife. Cut peaches in half; remove pits. Place peach halves in the water and lemon juice solution to prevent browning. Cut peaches into chunks; place in food processor. Process until finely chopped. Measure exactly 3 cups of fruit.

Deliciously Simple Applesauce

Ingredients

3 pounds apples – peeled, cored and chopped
3 cups water
1/4 cup SPLENDA® No Calorie Sweetener, Granulated
1 tablespoon lemon juice
1 teaspoon ground cinnamon

Directions

Place apples in a large saucepan and just barely cover with water. Simmer over medium-low heat until apples are tender, 15 to 20 minutes.

Run cooked apples through a food mill or blender. Stir in the SPLENDA® Granulated Sweetener, lemon juice, cinnamon. Cook over medium heat for about 3 to 5 minutes.

Nostalgic Apple Pie

Makes 8 Servings

Ingredients

1 prepared double pie crust
7 cups baking apples, thin-sliced, cored, peeled
1 cup SPLENDA® No Calorie Sweetener, Granulated
3 tablespoons cornstarch
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon salt

Directions

Preheat oven to 425 degrees F. Place one crust into a 9-inch pie pan.

Place sliced apples into a large mixing bowl and set aside. Combine SPLENDA® Granulated Sweetener, cornstarch, cinnamon, nutmeg and salt in a small bowl. Sprinkle mixture over apples and toss. Spoon apple mixture into piecrust. Place the second crust over the filling. Seal edges, trim and flute. Make small openings in the top crust.

Bake in preheated 425 degrees F oven 40-50 minutes or until the top crust is golden. Serve warm or chilled.
