Marinated Carrot Salad

Makes 12 Servings

Ingredients

2 pounds carrots, sliced, OR whole baby carrots
1 can (10-3/4 ounces) tomato soup
1 cup Equal Spoonful
1 medium onion, chopped
1 green bell pepper, chopped
3/4 cup wine vinegar
1/3 cup vegetable oil OR olive oil
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
1/2 teaspoon ground black pepper

Preparation

Boil carrots in a large saucepan on medium-low heat until tender; drain.

Combine remaining ingredients in a small bowl. Pour over carrots; mix well.

Refrigerate, covered, at least 12 hours to allow flavors to blend.

Strawberry Limeade

Ingredients

1-1/2 cups quartered fresh strawberries
1 cup lime juice
4 cups water
1-1/2 cups Equal Spoonful
Ice cubes
6 small whole strawberries, optional

Directions

Process quartered strawberries and lime juice in blender until smooth. Combine strawberry mixture, water and Equal in a pitcher.

Pour over ice cubes in tall glasses, garnishing each with a whole strawberry, if desired.

Sparkling Fresh Lemonade with Blackberries

Ingredients

1-1/2 cups sparkling water
1/2 cup freshly squeezed lemon juice
1/4 cup Equal® Spoonful
12 fresh blackberries, frozen
Ice, as needed
Fresh mint sprigs and lemon slices, optional

Directions

Stir sparkling water, lemon juice and Equal until combined.

Place 6 blackberries and ice cubes in each of 2 tall glasses. Divide mixture between the glasses and serve. Garnish each glass with mint and fresh lemon slices, if desired.

Sweet Sesame Chicken

Ingredients

1/2 cup raw sesame seeds
1/8 cup sesame oil
1 1/2 cups unflavored bread crumbs
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon dry mustard
1/8 teaspoon nutmeg
1/4 cup SPLENDA® Brown Sugar Blend
1/4 cup sesame oil
1/4 cup vegetable oil
1 1/2 pounds chicken breast, cubed

Directions

Combine the raw sesame seeds with the 1/8 cup of sesame oil and microwave for 2 minutes.

Mix the roasted sesame seeds with the bread crumbs, salt, pepper, dry mustard, nutmeg and SPLENDA® Brown Sugar Blend. Set aside.

Heat a large frying pan or wok with the 1/4 cup of sesame oil and the vegetable oil.
Dredge the chicken pieces in the bread crumb mixture so that they are evenly coated.

Drop the chicken into the hot pan and cook over medium heat.

Cook until golden brown on each side.

Remove from the oil with a slotted spoon and drain on paper towels. Serve immediately with rice, noodles or vegetables and assorted mustards for dipping.

Spicy Thai Noodles

Makes 10 Servings

Ingredients

1 Tbsp red pepper flakes, crushed
1⁄3 cup sesame oil
1 tablespoon lime juice
1 tablespoon rice vinegar
2 tablespoon Truvía® Nectar
1⁄4 cup soy sauce, low sodium
1⁄3 cup green onions, chopped
1⁄3 cup carrots, washed, dried and shredded
1⁄4 cup peanuts, roasted, unsalted, chopped
1 lbs. pasta, whole wheat dry
1⁄4 cup cilantro, washed, dried, chopped

Directions

In a small saucepan, heat the sesame oil and red pepper flakes on low heat for 5-10 minutes.

Pour the oil through a fine-mesh strainer into a medium size bowl. Discard pepper flakes.

To the warm oil: whisk in the lime juice, rice wine vinegar, Truvía® Nectar, soy sauce, green onions, shredded carrots, and chopped peanuts, set aside.

In a large pot of boiling water, cook pasta according to packaging.

Drain pasta, place into a large bowl.

Toss noodles with oil mixture.

Top with chopped cilantro.

Serve the noodles warm, at room temperature for up to 1 hour or cold, refrigerate any leftovers.
